I am a sucker for brightly colored meals foods. This salsa definitely is brightly colored. There are so many flavors going on that it makes a total mouth party! Eat this on regular tortilla chips (bonus points for whole grain), fish tacos, on cinnamon sugar tortilla chips (mmmmm…), or even by itself!
This is a simple recipe to make. You can give it more heat by leaving the veins and seeds in your jalapenos or take them out for a nice mild salsa. You can’t go wrong either way! This recipes takes a lot of chopping, but I promise it is well worth it.

Pineapple Mango Salsa
1 pineapple
1 mango
1/2 lb strawberries
1 small red onion
2-3 medium jalapenos, deseeded and deveined for a mild salsa
1/4 cup chopped cilantro
juice of 1 lime
1 tbsp. honey
Chop each ingredient into small bite size chunks. (Remember they need to be small enough for scooping up on a chip.)
Place the chopped fruit and vegetables in a large bowl. Squeeze the juice out of one lime over the fruit and drizzle with honey. Stir to combine.
Let ingredients set together in the fridge for at least a few hours to allow the flavors to come together for best results!
