Brussels Sprouts Saute

So I would consider myself a veggie lover. I always have been. (Must have been nice for my parents.) Recently I’ve been seeing a lot of recipes for brussels sprouts. They all looked appetizing except for one thing… brussels sprouts were one of the few vegetables I wasn’t fond of or familiar with. I could count on one hand how many times I had eaten them. All of which were in the cafeteria of my college. Since I profess myself to be a veggie lover, I decided with all these recipes for brussels sprouts going around I would give them another shot and prepare my own.

Boy! am I glad I did! I searched for some recipe inspiration…. and side note *I love love love looking up recipes. #pinterestlife. I usually find several recipes, get a general idea of how the dish is made and then combine ideas to come up with my own. * Once I found my recipe ideas this saute is what I came up with.

Sauted onions are awesome! But have you ever sauteed your corn?? I’m sure some of you have. If you haven’t, you should definitely try it. The flavor is delicious. It brings out the natural sweetness which compliments the brussels sprouts and onion.

This is a new favorite side dish of mine. It is easy to throw together and it is NOT boring! YAY! A non-boring and simple side dish!!!

1 frozen steamer bag of plain brussels sprouts

1 cup frozen yellow corn

1/2-1 medium white onion, sliced

1-2 tsp garlic powder

Pepper and salt, to taste

Small pinch red pepper flakes (optional)

1 TBSP olive oil


Heat oil in skillet on stove over medium high heat. Add all ingredients to skillet. Stir ingredients occasionally allowing them to char slightly. Turn heat to medium low and allow ingredients to continue cooking till reaching desired tenderness.
